Potato Enchiladas

1 Dozen Corn Tortillas
1/2 Cup chopped Onion
1 Cup Diced Potatoes’, boiled first
2 Cups Grated Longhorn Cheese
2 (10oz) Cans Enchilada Sauce

Combine potatoes & 1 cup of cheese in bowl.

Dip tortillas in hot oil until soft, then in heated enchilada sauce.

Fill dipped tortillas with potatoes mixture then roll and place in casserole dish.

Spread with sauce and cheese, put in oven, 350 °F until cheese is melted.

You can also have shredded chicken, beef or turkey on hand to make potato with meat enchiladas.

When I was in Middle School I use to help my Grandmother make cookie canisters - every year at Christmas we would make an assortment of cookies, breads, candy and put them in a wrapped canister and give them as gifts. I still enjoy this idea, although haven't done it that much - at least not an assortment of goodies. I think this year will be the year I go back to that idea and see how everyone likes it.     • Thank you, and enjoy. I haven’t quite mastered this Blogging, had to change things around 3 or 4 times, but hope that will be it, and I can get back to posting more.
