1 Dozen Corn Tortillas
1/2 Cup chopped Onion
1 Cup Diced Potatoes’, boiled first
2 Cups Grated Longhorn Cheese
2 (10oz) Cans Enchilada Sauce
Combine potatoes & 1 cup of cheese in bowl.
Dip tortillas in hot oil until soft, then in heated enchilada sauce.
Fill dipped tortillas with potatoes mixture then roll and place in casserole dish.
Spread with sauce and cheese, put in oven, 350 °F until cheese is melted.
You can also have shredded chicken, beef or turkey on hand to make potato with meat enchiladas.
