Donut Muffins

December of 2012 I went on a cruise to Hawaii, first time there, and it is sure hard to take in all the beauty and customs while on each Island for only a day.  But I sure did my best, and found the most unique food item… unique to me, it was served before you ordered, almost as they do in restaurants with a small loaf of bread to get you ready for dinner. However this was a little round pastry type thing with really fine sugar on it, we of course at it then asked “what is it”.  It is what they referred to as “similar to a donut”.  These are so close…..

Recipe shared from – Mac & Cheese

3/4  Cup sugar
1  Egg
1/4  Cup vegetable oil
3/4  Cup milk (made one batch with rice milk to good results)
1  tsp. vanilla
1 1/2  Cups flour
2  tsp. baking powder
1/4  tsp.
1/4  tsp. ground nutmeg

Coating:

2  Tbsp. butter, melted (optional)
1/2  Cup superfine sugar (can pulse regular sugar in food processor to make), or powdered sugar.

We have also used a cinnamon/sugar combination.

Lightly grease a muffin tin with vegetable oil or spray.

In a large bowl, beat together sugar and egg until light in color. Add vegetable oil, milk, and vanilla to sugar mixture and combine.

In a separate bowl, combine flour, baking powder, salt, and nutmeg.

Then pour into liquid mixture and stir to combine.

Fill muffin cups 3/4 full, and bake in a 350° F preheated oven for 18-20 minutes, or until a tester inserted in the middle comes out clean.

When I was in Middle School I use to help my Grandmother make cookie canisters - every year at Christmas we would make an assortment of cookies, breads, candy and put them in a wrapped canister and give them as gifts. I still enjoy this idea, although haven't done it that much - at least not an assortment of goodies. I think this year will be the year I go back to that idea and see how everyone likes it.
