Taco Pizza Cups

Ever found one of those recipes that not only catches your eye, but makes you say ohhhhhh out loud?  Here is one that is a winner in our house.

Adapted from – Mommy Hates Cooking

Ingredients:

1  Pizza Crust
1  Lb Ground Chuck
1  Package Taco Seasoning
1  Can Ranch Style Beans (I make these on the side, not everyone likes beans)
Lettuce
Black Olives
Diced Tomatoes
Fritos (We use Tortilla Chips)
Shredded Mexican Style Cheese
Diced Onion (if desired)
Guacamole (if desired)
Fat Free Catalina Dressing and/or Ranch Dressing or Salsa

Directions:

Preheat oven to 400° F.

Begin by cooking the ground beef, then add the taco seasoning as instructed on the package. Let this cook and then set aside.

Spray a muffin tin with non stick cooking spray.

Roll the dough out on a floured surface and cut into rectangle shapes, 1 crust should make 12 rectangles. Place these to fit over the muffin tins.

In each muffin tin add a spoonful of ground beef and set our for each to top as they choose.

Let this bake in the oven for 10-15 minutes until crust is golden.

Once these come out of the oven, top with a little bit of your desired toppings then drizzle on the Catalina dressing. We let everyone top their own, as they all have different tastes!

Using this recipe I made 1 dozen Taco Pizza Cups.   I usually double the recipe, as these are great for after school snacks, or a quick lunch and heat up well!
