Forgotten Cookies

Just another of Grandma’s favorites, as kids we thought they were magic, so light and airy!

2  Egg Whites
2/3 Cup Sugar
1  Cup Mini Chocolate Chips
1  Cup Chopped Pecans
Pinch of Salt

Preheat oven to 350° F.

Beat egg whites until stiff (about 5 minutes).

Gradually add sugar and continue beating until mixture is stiff.

Add chocolate chips, pecans and salt, mix well with a spoon.

Cover two cookies sheets with foil and add a light coating of cooking spray.

Using 2 teaspoons drop cookies onto foil.

Place into oven and turn oven OFF immediately.

Leave cookies in oven overnight with door closed.

You can add any type of chocolate chips, nuts, etc.  I have made them with Toffee bits and walnuts too.

When I was in Middle School I use to help my Grandmother make cookie canisters - every year at Christmas we would make an assortment of cookies, breads, candy and put them in a wrapped canister and give them as gifts. I still enjoy this idea, although haven't done it that much - at least not an assortment of goodies. I think this year will be the year I go back to that idea and see how everyone likes it.
